Diet:
• 1 onion
• 400g peas (net weight)
• 1 tbsp olive oil
• 200g smoked tofu
• 1/2 vegetable stock cube or 1/2 tsp stock powder
• 6 beautiful lettuce leaves
• 150ml vegetable cream (oat, soy...) or just cream
Peel and chop the onion. Place in a casserole dish and sauté with the peas, olive oil and half of the crumbled smoked tofu.
Cover with just enough water, add the vegetable stock and simmer for 15 minutes, until the peas are tender.
Turn off the heat, add the chopped lettuce leaves and cover.
Wait 5 minutes, then blend the contents of the casserole with the cream.
Season to taste with salt if necessary and serve piping hot with the remaining smoked tofu cut into lardons.
