Greek Runner Bean Salad

Ingredients

• 300g runner beans
• 2 large tomatoes
• 1 shallot
• 2 handfuls of black olives
• Basil
• Feta cheese (or vegetable feta)
• Salt and pepper

Method

Cook 300g of runner beans in a steamer for 12 minutes, then cool under cold water. Set aside.
Dice the large tomatoes and feta cheese, chop the shallot and black olives and chop the basil.
Pour into a salad bowl.
Drizzle with olive oil and balsamic vinegar.
